Lunch today 2 small slices wholemeal bread spread with hummus and topped with Quorn red pepper slice and cucumber.
Tofu Mayflower curry with wild rice.
Tonight it is chilli and rice, yum.
Lunch today was half eaten before I remembered to document it! But here we have two ryvita spread with hummus and topped with cucumber and hard boiled eggs.
Hoisin chicken is adaptable. This time it’s made with chicken thighs although at times I’ve used chicken breast, frozen pieces, and could use Quorn or tofu instead.
Avocado and poached eggs on toast for lunch again today. One of my favourites at the moment.
Dinner tonight is tuna pasta bake, lovely.
Protein bagel with mashed avocado and smoked salmon for lunch.
